Mom’s cookbook from 1970!  Good Lord!  To see what recipes were popular 40 years ago is a riot.  Anyone for Chipper Tuna Casserole?  ( I feel like a closet tuna casserole lover, but I requested this dish many a times in my childhood)  Cream of mushroom soup topped with crushed potato chips.  Oh Yeah!!

I found this amongst the antiqued yellow pages…even then I must have wanted to cook!

Big decision this weekend…Salad Dressing Cake,  Orange Kiss-Me Cake, or Black Bottom Cupcakes….

And the winner is….(drum roll please)

Get out your Ipod out and crank up some Debby Boone “You Light Up My Life” or Anita Ward “Ring My Bell”  and enjoy these old school cupcakes.

Preheat Oven to 350.

Combine:

3 oz. cream cheese

1/3 cup sugar

1 egg

1/2 tsp. salt.

Beat and stir in 16 oz. of chocolate chips.  Set aside.

Combine:

1 1/2 cups of flour

1 cup sugar

1/4 cup cocoa

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

Add:

1 cup water

1/3 cup of oil

1 tsp. vinegar

Fill cups 1/3 full of dark mix and add 1 tsp. of light mix on top.  Bake for 30-35 minutes.

    Yes, looking thru old cookbooks is a blast… You never know what goodies you’ll find stuck between the pages… little things like your drawings & such…. Sweet!!!
    Cupcakes are definitely back in style!!! (Did they ever go out of style?????)
