Summer Salads

The Farmer’s Market started up again and the fresh vegetables are just stunning.  Radishes, rhubarb,asparagus and lettuce.  Summer weather has started heating things up and salads seemed  to be the order of the day.  The first salad is with some of the beautiful things from the market and the second is a vibrant Orzo salad that would be perfect to take on a picnic.

Jicama, Radish, and Pepita Salad *If you like cilantro, this salad is incredible*


1/2 cup olive oil

1/3 cup chopped fresh cilantro

1 1/2 tbs white wine vinger

1 tbs honey

1 1/4 tsp ground cumin

5 oz. butter lettuce

2 cups diced, peeled jicama

1 cup thinly sliced radishes  ( about 8 )

1/3 cup pumpkin seeds (pepitas), lightly toasted

1/2 cup crumbled Queso Fresco


Whisk first 5 ingredients in a small bowl. Season dressing with salt & pepper.  Toss lettuce, jicama and radishes in a large bowl. Add dressing and toss to coat.  Sprinkle with pumpkin seeds and cheese.

Orzo Shrimp Salad with Mustard-Dill Vinaigrette


3/4 lb orzo, cooked al dente

1 large cucumber, seeded, quartered lengthwise, and sliced

3 green onions, thinly sliced

1 pint grape tomatoes, halved

1/4 cup chopped fresh dill

1/4 cup white wine vinegar

3 tbs Dijon mustard

1/2 cup olive oil

3/4 lb. feta cheese, crumbled

16 medium shrimp, peeled and devined (pre-cooked)

Salt/pepper to taste


Combine cooked orzo, cucumber, green onions, and tomatoes in a large bowl.  Place dill, vinegar, and mustard in a bowl and mix. Slowly add olive oil and whisk until emulsified. Season with salt and pepper.  Cut shrimp up into quarters,  mix in bowl. Pour the vinaigrette over the orzo mixture and stir well to combine.  Gently fold in the feta cheese.  Garnish with extra dill.
